Fresh Rolled Pasta
The smooth texture and tenderness of our pasta comes from the simplicity of our recipe – a mixture of the highest-quality eggs and freshly-milled flour. We knead the dough gently and thoroughly, just as you would do with bread. It’s a tactile and very hands-on process. There’s nothing digital or automatic here! Then, the dough is pressed through rollers until it is as flat and as thin as we want it to be. Finally, we put it through shapers or cut it into long noodles. Or, we stuff it with some homemade goodness into tortellini and ravioli. Yum! All of our products are freshly made in our facility in Canmore, Alberta.
